Make Gardening in Merritt BC Enjoyable

Therefore, a good rule of a green thumb, is to not be intimidated by the process of how to start a garden and care for it successfully. Although,  there is a lot of groundwork involved, it is not work. It is quality time outdoors for body and mind. Deciding to the garden is the easy part, but the biggest decision is going ahead with the project. The benefits of “reaping what you sow” will lift you to the highest level of calling yourself a “Master Gardener”

Garden Location in the Nicola Valley

Starting a garden is just like real estate. It’s all about the location. Knowing where to plant, what to plant, and most importantly when to seed is crucial. Start by paying attention to the sunlight, where is it in the morning and where it goes in the evening. Secondly, how to space your seeds and what should be near what? Should your carrots be neighbors with lettuce or spuds?  Moreover, know your zone. This means, that the higher the zone number, the warmer the climate. If a plant is for zone 4, and your garden is zone 2, that plant will not survive. Most edible plants, including many vegetables, herbs, and fruits, need at least 6 hours of sun to thrive.

A Local Tip: “Never plant if there is snow on Iron Mountain, or before May long weekend,” Tania Stewart.

Invest in Good Gardening Tools

I cannot state enough how the right tools make working in your garden a pleasure instead of a chore. Here is some basic gardening equipment to get you going.

  • Garden hoe
  • Scuffle hoe
  • Dirt rake
  • Leaf rake
  • Garden Shovel or D handle Shovel
  • Hand tools
  • Rototiller

Water Source

The best gardening tip you’ll ever get is to plan your new garden near a water source. Make sure you can run a hose to your garden site, so you don’t have to lug water into it each time your plants get thirsty. Fact, the best way to tell if plants need watering is to push a finger an inch down into the soil (that’s about one knuckle deep). If it’s dry, it’s time to water.

Do Not Forget To Plant Flowers

Bees need flowers. Throughout the world, people have taken on the fight for the survival of our “Bees”.  Merritt BC Canada is no different. Every day more and more people are becoming more aware of how important these hard-working honey makers are to our survival. Not to mention, without bees, the availability and diversity of fresh produce would decline substantially, and human nutrition would likely suffer. It Is All In The Soil

What do you really know about your garden soil? If you can try to invest in nutrient-rich soil. Test your soil to see if it’s acidic, alkaline, or neutral PH. Is it rocky, sandy clay, or just a mix of all? Does your soil have a good amount of basic nutrients?  This is something my avid gardening father takes seriously.

Gardening as a family

Learn your frost dates

Planting too early (or late) in the season can spell disaster for your garden. You need to know the last average spring frost date for your area so you don’t accidentally kill plants by putting them out prematurely. It’s also good to know your first average fall frost date so that you get your plants harvested or moved indoors before fall frost damages them.

One can not stress the importance of your “Planting Groundwork!” Take extra care in the beginning, and the result is what you reap.

The result.

Planting with Care

Once you have done the groundwork, next is planting. Do not hesitate to ask neighbors where to purchase your seeds. Albeit the rule of thumb when planting seeds is roughly 3 times deep as the size of the seed. Unless otherwise directed on the package. When transplanting, usually you will plant at the same depth as they were growing in the pot. Important to note, that tomatoes can be planted deeper.

Consider containers when gardening Merritt BC.

When space is at a premium, look to containers. You can grow many plants in pots, including vegetables, herbs, flowers, fruit trees, berries, and shrubs. Planting tomatoes can be tricky. Using potting containers is sometimes ideal for small spaces as well as maturing them enabling their survival. Strawberries can also thrive well in containers.

Warning!

Every garden, may want to cover and protect from winged bandits! Birds love the sweetness of the berry, covering them will protect your plants and keep deer from eating the flowers and destroying the growth. Most important this is a safe non-chemical deterrent to natural pests. If you spray it, you will eat it!

Mulch is Great

Weeds suck the life out of plants, mulch helps reduce these nasty veg killers. Apply a layer of mulch that’s 2 to 3 inches deep around each plant. Help reduce weeds by blocking out the sun and reduce moisture loss through evaporation, so you have to be waterless.

Nurture your garden in the Nicola Valley

Take it from me, my father is the best fertilizer, he is the garden’s shadow. Most important is to be prepared to make time to tend to your plants. Depending on the size of your garden, time requirements may range from a few minutes of weeding, and watering, to a full-time day job. Watering your plants, as a rule of thumb need around one inch of water per week.

Bugs and Disease

When gardening in the Nicola Valley beware of bugs. Moreover, bugs are more attracted to plants that are stressed or in some way deficient. If you have healthy, well-nourished plants, your pest problems should be minimal. Noteworthy, for most problems, there’s an organic solution. If you’re going through all the effort to grow your food, why would you want to put toxins on it? Overwatering is almost more harmful than underwatering.

A tasty way to enjoy Halloween Treats!

You are going to feel like the ghostess with the mostest when you try this Halloween Snack Board.

This Halloween snack board is just the thing you need to try. Snack boards are so multi-purpose. I do them for lunches and I do them for birthdays. This board was created last year when Covid hit and we were all in lock down. It was such a somber season for for the entire Nicola Valley and the world.  As a result I decided we would have our own little party.

Halloween Snack Boards are Spooktacular Treats!

I had never made one for Halloween and wanted to boost the kids spirits. We assembled this easy enough and I am sure you could definitely simplify it by only picking a few elements to recreate. Furthermore, I wanted the kids to be quite hands on with this and have a great experience. Based on the snack board we created as a family for Valentine’s Day, I had some ideas on what I wanted to do.

Getting spooky like this is easy with a quick trip to Walmart. They always have such a great assortment of cookies and cupcakes seasonally. So putting something like this Halloween snack board can be as easy as 1,2,3! You can make your board a mixture of sweet or savory, like I chose to.  Or you can choose to keep it completely on the sweet side with gummy candy, cookies, and candy bars.  This Halloween snack board has some homemade items and some bought items. Don’t burn yourself out. Let your creative juices flow. Lastly and most importantly have fun and take a lot of photos of your creative eating masterpiece like we did. !

Interested in making your own mummy hot dogs? They come together easily enough. And can make your own Halloween snack board totally stand out. All you need are your favorite hot dogs. Then some canned crescent roll pastry.  You then simply place the crescent roll pastry on to your cutting board. Cut into strips and then wrap them around your hot dog. Place on a parchment lined cookie sheet and bake for 12-15 mins or so at 350 degrees. You can then use mustard to make eyes. Lastly theses were so fun for all of my kids to make. So easy and very tasty!

Can you find the black olive spiders? They came together quick and easy. Just slice open 1 black olive lay it flat and with the opposite side make the legs. Camping  Treats for All Seasons

Smores is delicious snack for any time of the year in British Columbia

Easy Smores Dip –  Summer treats when in Canada brings on so many amazing experiences. A huge part of summer in British Columbia is R&R, and a big part of that relaxing could be sitting around a campfire enjoying smores. Our beautiful  province is blanketed in lush mountains and heavily forested areas, and not many things comes close to the joys of sitting around a campfire, enjoying family and friends under the stars, snacking on smores.  It just might be the unofficial food of camping for kids.

Easy Smore Dip - Campfire treat

Easy Smores Dip Helps With Fire Safety

However, smores is not just a campfire treat, no…  you can have smores anywhere and anytime. And if you live anywhere where campfire bans are usually in effect, and for good reason, there are alternatives. This summer was one to remember for so many people who were displaced during evacuations. For this reason we even had the children’s Great Grampa stay with us during the Logan Lake fires.

Smores Deconstructed

Crackling Fires And Warm Summer Nights

So how do you enjoy this tasty seasonal delight? Pop it in the over of course! As a result you can now enjoy it for all 12 months of the year. Easy Smore dip satisfies that deep craving crackling fires and warm summer nights. Smores are decidedly  a flavor of a Canadian summer that can make a place for so many happy memories. It’s so easy and a great dip to have kids help in the kitchen with. With a little supervision kids can easily make this easy smores dip quickly and safety of home. This dip goes from prep to table in 20 mins or less.

Still Sticky, But With The Comforts Of Home

Smores Can Be Quite Sticky If You Aren’t Prepared

Easy smores dip is almost a cheater meal. First off if  you are new to the world of smores let me give you an idea of what these are to you. Smores are a gooey fire roasted marshmallow and chocolate square smooshed together between a cookie or graham wafer cracker. The method is usually quite simple. But can be a very exciting food item to make, especially if you have any child under the age of 4 around the campfire awaiting a delightfully sticky snack. To make this treat in theory so simple yet super tricky.

Easy smores dip ingredients and tips and tricks.

Directions

Lightly grease whatever sized pan of your choice. I used my tiny cast iron for a more camp like theme.

Coarse chop roughly 3 cups of chocolate. We ended used a giant frozen Toblerone we had saved since Christmas.
Then you can lay the marshmallows on top. Enough to cover the pan.

Ingredients for Smores

Easy Smores Dip Baking Instructions

Oven temp – 400
Place in oven for 5-7 mins. Watching the marshmallows closely
While that’s baking assembly is a breeze for this easy smores dip. Simply place graham crackers on a board or tray. In addition you can dip and dunk cookies, pretzels, or fresh fruit. Be cautious if you are dipping straight from the pan. It holds the heat and can burn. Parental supervision is a great idea.

In Conclusion

I would personally like to thank everyone involved in our summer and the fire efforts made here in our beloved province. Thank you to everyone doing your part and helping us all grow in being fire smart. Our hearts go out to those that have lost so much and to those brave men and women working tirelessly to help keep us all safe. Additionally making small tweaks as we practice fire safety  doesn’t mean we can’t still enjoy experiences. Easy smores dip certainly makes #nocampfirenoproblem! Exploring the great outdoors and making plans is easy when you follow the Experience Nicola Valley Crew! As always if you recreate this recipe give us a tag. The family and I would love to see your creations and connect.

Fun Facts About Rhubarb

Some fun facts about rhubarb. If the idea of eating it makes you wrinkle your nose these might be a way to entice you to eat more of it in the future. Rhubarb is a anti-inflammatory that can help build your bone strength.  It can improve your liver health and is packed with fiber, calcium, vitamin C and potassium. A quick caution however you want to make sure you never consume the leaf of the plant just the stalk. The leaves are very poisonous, wash your hands after you handle. A great way to remove your rhubarb is to twist it with your hands. Never cut it. As that can confuse the plant and it will stop producing stalks for you to enjoy.

Festive White Hot Chocolate – Merry Xmas

Festive white hot chocolate is a decadent twist on a winter warmer you may not have tried yet

With a few simple ingredients, this creamy indulgent treat takes your winter holiday experience to a delectable new level

Who doesn’t love sipping on festive white hot chocolate, something warm and creamy, after being outside? Especially with out chilly winters here in Canada. I think everyone has a staple that they reach for when they come in from the cold. For some it may be a warm coffee or tea. However, you can rest assure, in my home, we are usually sipping on hot chocolate or apple cider after a romp in the snow. Why not make a fun twist on a childhood classic and give this one a try today.

White Chocolate In The Great White North

Warming up after being outdoors is nothing new to us Canadians.  But have you ever considered trying white chocolate? Do you like it? Have you ever even tried it? White chocolate is not technically chocolate so its a great caffeine free option if you were not aware of that.

What I do know is that the kids will sleep good that night, after you have tuckered them out from being in the snow. Lastly, white chocolate is creamy and sweet, a less bitter option of its dark and delicious cousin.

White Hot Chocolate Recipe & Method

6 oz of White Bakers Chocolate Squares

395 grams of White Chocolate Chips

4 Cups of Water

3 cups of Powdered Milk

Pinch of Salt

2 tsp of Vanilla Extract

1 Cup of Half n Half

Extra Toppings for Hot Chocolate:

Festive Sprinkles, Marshmallows, Whipped Cream, Toasted Coconut, Oreo chunks or more white chocolate chips.

Method:

Add all the ingredients ( except the extra add ins ) to a pot. We are going to slowly stir and warm everything up together. Whisking or stirring frequently, we want everything smooth and melted together for maximum flavor.

Keeping an eye on the heat we do not want to bring this to a boil. Serve warm with your marshmallows and maybe some extra chocolate chips. Or with a generous serving of whipped cream and sprinkles. In addition I think Oreo chunks would also look and taste amazing!

Do You Like It Honey?

Famous last words right? I turned to my husband Kyle and asked him if he would like some of our festive hot cocoa. To which he replied “Sure!” I gave him a steaming mug of the liquid sweet syrupy goodness and he drank it silently and walked off. Curious my treat drink was a flop to him, I followed him and asked him that fateful question “Do you like it honey?” to which he replied that it was “OK”.

OK?! Shocked and thinking that my drink for the blog was quickly tuning into a flop… I mustered up the courage to ask him, “Would it taste better added to half coffee?” To which Kyle quickly smiled and said “oh you bet!” I think adults may or may not appreciate adding this to half coffee creating a while hot chocolate mocha.

How Do You Get Them All To Look?

However, it is important to remember to do your best and have fun. Don’t take yourself too seriously. I feel like I always have to remind myself of that fact also. Just remember that you are capturing moments of happiness. Its ok if someone’s maybe looking off into the distance, or having a giant belly laugh. You’ll want those pictures maybe more so as you age.

My Secrets to Fall Photos in Logan Lake

One trick I have learned, at least, when taking photos of my kids, is sometimes I will just hit record with my iPhone and film them posing. Assuredly just talking to them, ask them to smile or say a joke will most likely get me the results I’m looking for. Usually in that split second of me saying smile they all do. Then I go to the video and drag my finger along over the pause button. If I find a good “pause” with all of the kids looking and smiling. I will then tap the photo to take off the boarders, and just screen shot it. Ta-Da! Easy photo!

With out a doubt I always use Costco for all my photo developing needs. Weather its getting a birth announcement together, making photo books, or just developing photos. Don’t be surprised if you see some of these photos on our Christmas card this year. Assuredly  making photobooks to gift to the family at Christmas has been a lovely tradition to hold onto. In addition I always tweak my photos with an photo editing app. I love using the Lightroom App on my Android. Just because I enjoy the stock presets that they have and the fact that I can create and save all my own presents for free. Photo editing is a great way to add more light, play with shadows, make colors more vivid.

School Snack Ideas and Recipes

My Best 5 School Snack Ideas!

Being a mama of 7,  our house runs on snacks. I  hope you enjoy my 5 back to school snack ideas! Nutritious and delicious.

So this week I decided to share with you our school snack ideas! Consequently it is back to school season. Therefore it is a great time to share school snack ideas that my family comes back to again and again. I think these snacking suggestions would be great for anyone, home schooled or public schooled. Assuredly these are some great options if you are hungry and need something to tie you over until your next meal.

Plant Based School Snack Ideas

I love using plant based treats for snack time. These snacks come loaded with healthy grains,  nuts and seeds. Add  in healthy fats like coconut oil or delicious nut butters and you have a sticky and satisfying snack time. In conclusion I feel these plant based snacks have all  the makings for the perfect school snack.

School Snack Idea #1 Chocolate Hummus

Hummus is a great one to lead with for school snack ideas. A different spin on a good classic staple. Hummus is great any time of the year. I love keeping a batch fresh and ready to spread on tortillas or rice cakes. That is where chocolate hummus comes into play. Decadent and dark, enjoyed with fresh fruit or pretzels this is a crowd pleaser. In addition to dates being a sneaky health building sidekick, binder and tasty thickener – they are high in fiber and may promote brain health. Which makes them a easy go-to for an after school snack.

Hummus

Unexpectedly Yummy

Chocolate Hummus Recipe

1 Can Chick Peas ( microwave for 3 mins to cook)

6 Dates (more or less – depending on how much sweetness you are looking for)

1/2  Cup Cocoa Powder

1/4 Cup Honey or Maple Syrup

Pinch of Sea Salt

1/4 Cup Tahini Paste ( If you do not have any of this on hand, you could always use peanut butter or maybe almond butter)

Blend in your food processor  taste and enjoy! I recommend trying this a few times before you say you love it or hate it. It does have a “beany” taste some may pick up on. But I would say, don’t give up on it if they first batch is a bust. In conclusion I know my kids love this now. But did take some effort to warm up to the idea. I am ecstatic I can add it to my school snack idea rotations.

School Snack Idea #2 Fruit, Veggies & Protein

School snack ideas is not complete with out these three. For example, I keep fruit and veggies stocked up in this house. I was recently listening to the audio book “Atomic Habits” and in the book the author was talking about replacing cookies to fruit in your cookie jar. This was something I did years ago when my kids were little. I counted this as a win.

Easy Kid Meals snacking

Un-Bear-Ably Cute

Previously, the sight of the cookie jar made me want a cookie.  Or my toddler would want a cookie. Since replacing the “cookie” with fruit. Our eating habits have improved as well as our waistlines. For us a easy protein is always nut butters or hummus. In addition a small handful of almonds or walnuts is also a great way to get some healthy fats and protein. This un-bear-ably cute snack was created with sliced “banana pennies”, peanut butter and tasty blue berries.

Snack Idea #3 Treat balls

School snack ideas cant be complete with out these super simple and easy to do treats. I love making a huge batch of these and enjoying some right away. But then also tucking the rest away in the freezer. Perfect for when a sugar craving hits, or you need some easy protein after a work out or intense trip or as a reward for not buying the cookies you were eyeing at the supermarket. I personally love to use them as a way to get our daily flax seed intake in. Flax is delicate and can loose effectiveness if heated to high temperatures . So I feel the best way to enjoy it is either in a fresh smoothie or eating in a raw tasty treat ball. I like to store my flax in the freezer for freshness, it can go rancid if left in the cupboard for too long.

Snack Idea #4 My Home Made Granola Bars

These are a great school snack idea! Granola bars always are a hit! They are perfect for adding into lunches or ready to go when you want to hit the trails and go on an adventure. So easy to have it ready for when you need some quick and easy inexpensive energy. I have made these bars for years. And have played around with different flours. You can always add an extra egg or add more apples sauce or even a banana if you use a flour that is more dense like whole wheat or spelt.

Easy for little fingers to handle also.

These are a great after school snack. Chickpeas are high in protein and fiber, and offer a good dose of iron while stabilizing your blood sugars. So all in all a great snack to reach for in the afternoon. I love to make a big batch of these and add to snack time or as a side to our lunches. These are super yummy sprinkled over salads here are a few recipe ideas to get you as excited for these as I am. I always bake mine in the oven, But I could see owning something like an air fryer might be pretty great for this healthy treat!

Home Schooling In BC Canada

Home Schooling in BC Canada – I am so glad to be back for part 2 of Home schooling! As a result, today I am going to go over our favorite field trips or day trips! One thing I  love about homeschooling in BC Canada, is all the amazing places we have to explore right here in our backyard. I wanted to make this into a quick resource post, and just share some of the places we love to take our family too.

Adventures of Home Schooling

In the first blog post about home schooling in BC Canada I wanted to give you a feel for our schedule in PART 1. In today’s post, I wanted to go over our home school favorites! These are a few places I like to use to “fill in the gaps” or gain some inspiration. In addition, go and explore with the kids and experience nature and wonder. Its exciting to see the magic of childhood through my children’s eyes.  Grab yourself a warm cup of whatever makes you happy! And lets dive right in!

Logan Lake In Beautiful British Columbia

Things to do in Canada with kids

Simple, slow and lovely days are offered to you in Logan Lake

Home schooling in BC Canada is made easy, when living in Logan Lake BC.  Unquestioningly,  in my view, Logan Lake is the best for fitness! Consequently, it is extremely family friendly and I feel safe walking around it with my 12, 10, 8, 6, 5, 3 and 21 month old. All in all we have a great time getting our steps in taking the family for a walk around the lake. The lake has just all the right ingredients for a good nature walk. More importantly, I use it for nature study and having the kids journal about what they seen and observed. Admittedly it has tons of wildlife to observe. We love watching the eagle carry fish across the lake to its nest. All the ducks, and geese we get to watch. We have encountered deer on the trails around the lake. Its rugged and rustic with a paved walkway, just the way this glamper likes to experience the great outdoors.

Getting Fit While Home Schooling In BC Canada

If you are feeling adventurous and exceptionally fit and strong, we have successfully taken our double stroller all the way around the lake. There is a more scenic and woodland nature trail along the mountainside. On the highway side they have a very wide and beautiful paved pathway.

More Than Walking In Logan Lake

In addition, if you follow the nature path you can find the Logan Lake Bike Park. Its natural and very impressive and so nicely done! Our kids have a total blast at it. Its great to burn off extra steam and help the kids gain new experiences and reaction skills every time we go. I find the trails very clean and nicely groomed while still being very natural. No need for hiking boots, runners will do just fine. And in addition our 3 year old was able to comfortably walk at her pace with a few seated breaks and a granola bar to keep her going.  Logan Lake has many fun recreational ideas any time of the year. Our family has grown to love our small town that we call home. Its so vibrant, friendly and serene.

The BC Wild Life Park

Spirit Animal

The B.C. Wild Life Park and its adorable Spirit Bear

This is hands down the best local place to get up close and personal with animals. Above all we love to study and draw at home these critters and beasts. It is just so fun at the BC Wildlife Park. We absolutely love to take the kids there. A favorite blast for both Kyle and myself. We have enjoyed going to BC Wildlife Park ever since we were kids. However, its more exciting now as parents to be able to share that with our children.

The B.C. Wild Life Park Always Evolving

Kamloops Wild Life Park

Kamloops Wild Life Park Home Schooling

It is exciting while home schooling in BC Canada to see how the park is always growing and always changing. Also, I love how they educate us and give us a personal natural experience every time. Its always so beautiful there.  In addition to nicely laid out paths and walkways its easy for me to push a stroller and keep up with my active kids. As a Mom I enjoy that they have interesting facts about the animals all over the park. And informing us as to which ones are rescues and their unique back stories.

The Main Attraction of the B.C Wildlife Park

The animals of course are an exciting main attraction. My favorites include the bears, wolves and buffalo. Hubby and I also really enjoy the coffee. There is nothing more romantic to me than enjoying a stroll and a coffee with him. In addition, I think my favorite time to go is in the fall season. It just feels super good to get in one last train ride and enjoy the crunchy leaves. The wild lights tour in the winter months is also fun. Its so beautiful to go, get all bundled up, and then see all the twinkling lights at night time. Lastly, it definitely tops one of my favorite experiences  in the colder months.

Desert Hills Ranch

Influencer for Instagram Photo Idea

Cutest little pumpkins at Desert Hills Ranch in Ashcroft B.C. Canada

If you are looking for a fun and family friendly farm, assuredly, Desert Hills has all your social media influencer needs covered. This is definitely the  location to take some amazing fall photos. Never mind all of your garden, canning and pumpkin needs.  When Kyle and I lived in Ashcroft BC we were constantly at our favorite local farm. And that was Desert Hills Ranch . Homeschooling in B.C. Canada got a lot easier with this great location.

Curb Appeal, Animals, Pumpkins & So Much More

Dessert Hills helped with my home’s curb appeal with an amazing selection of lush blooms, trees, plants and pots. In retrospect, I think my favorite time to go was when they had fun sale weekends, such as peaches or salsa making. I always loved going on Mothers Day too when they honestly know how to spoil a gal.

The kids would always enjoy going through the barn to see the  baby animals and the gorgeous horses. The selection of farm tractors and old machines is bar none. Even being able to burn off steam at the park area always brings back happy memories for my kids. The staff are all so friendly, helpful and kind. You wont be disappointed with this trip.

Smiles for miles at the Castle Fun Park Go-Karts!!!!

Castle Fun Park is a place we have enjoyed coming to off and on over the last 10 years. From mini golf to arcade games this place is fun. However we came here the other day with the go carts in mind. It was such a great family activity. While Kyle zoomed around the laps with our littles. Our older children got to enjoy some driving time. My oldest as well as all the rest were overjoyed!!! Chasing Dad was a huge hit! At $8 for a race I think it is totally family and budget friendly.

Large  Chocolate Chip Cookies

This Recipe is here to save your day! Try this Large Batch of Chocolate Chip Cookies today!

“One bite of these large chocolate chip cookies and all of your cares seem to slip away. But, and there is always a but, when dipped slowly into a cool glass of milk, or enjoyed with a steaming mug of hot coffee this is a moment you can savor and be present.”

Large Chocolate Chip Cookies – To begin with I am so thankful you stopped by today! I am very excited to be sharing with you, from my home kitchen in Logan Lake, BC, Canada,  my famous home-cooked recipe for large chocolate chip cookies! Honestly there are just some days you need a large batch of chocolate chip cookies… And fast!!! For example you might be looking to feed your hungry household, run a day care, need an extra large batch of chocolate chip cookies for an after school program or church function. Maybe even get a  jump on your Christmas cookie exchange!!!

Grandma’s Large Chocolate Chip Cookies

For us, our reason for so many cookies is because we are a large family. I am mama of 7 kiddos, yes you read that right, and there ages 12 to 20 months.  On the whole these large batch chocolate cookies are here to save your day like they often have saved mine. I really wanted to share this family recipe to everyone in need of a bunch of cookies! In short these large batch chocolate chip cookies are certainly a delight! Chocolaty, the perfect reminiscent crisp and chewy mouthful from your childhood. I would know, as this cookie recipe has been passed down generations and now I am sharing it with my kids and you, my friends online.

Freezer Cookies

Big Kid Approved

Busy Mama in the Kitchen

Raising 7 children in the rugged and beautiful mountains of British Columbia Canada. That is me.  The other day we woke up  and the weather was so crisp and chilly. In other words, days like that are the best time to create a slow living day. We like to use baking times to our advantage. We love to teach applicable math skills to little ones and community in the kitchen. Having kids mix batter or add ingredients, and of course subtraction as the cookies cool off. You could say our kitchen seems like the heart beat of our home, Or maybe that is the laundry room. Either way if either of those rooms go down we are toast.  For example, when I get in the kitchen more often than not everything is “large batch”, likewise if I get in the laundry room —large batches in there also!

Busy Mamas are Always Prepared

It’s so great to have a freezer stocked up for the foreseeable future full of snacks or yummy treats. I also loved having large batch chocolate chip cookies ready for when we would go on day trips and pack a quick picnic lunch. Honestly, to have a freezer stocked with soups, snacks, granola bars, muffins and casseroles helps me stay on track of the home so much better. It also gives me peace of mind if someone gets sick, or I need a night off. In addition its perfect when we had friends pop over, so easy to thaw and enjoy. But there is also something so delicious about a homemade chocolate chip cookie. Yum…Yum!

Large Family – Baking Day!

One Bite of These Large Chocolate Chip Cookies and …

… all of your cares seem to slip away. But, and there is always a but,  when dipped slowly into a cool glass of milk, or enjoyed with a steaming mug of hot coffee this is a moment you can savor and be present. Able to smile and find simple happiness. Enjoy the fruit of your labors. Likewise pause and look into the eyes of those you love and connect. Therefore, I am actively inputting  a lasting memory into the ones I love. Even though we are in a time of crisis you can chose to capture moments. As a result you create a anchor point of security and safety and comfort. This large batch of chocolate chip cookies will offer you comfort and nostalgia (Hi Garndma!) and an opportunity to practice being present and mindfulness.

Kitchen Aid Mix Master

Baking with “littles” is always an adventure.

The Best Large Family Batch Chocolate Cookies

Ingredients:

4 1/2 cups all purpose flour

2 tsp baking soda

1  tsp salt

2 cups of vegetable shortening

 1 1/2 cups sugar

1 1/2 cups brown sugar

4 eggs

2 tsp vanilla extract

4 cups of chocolate chips

*Optional*

1 – 2 cups chopped nuts

Directions:

Pre-Heat Oven 375F

First of all. In a small bowl combine your flour, baking soda and salt. And set this aside.

Secondly in your large mixing bowl. Cream your shortening, brown sugar,  sugars in your mixing bowl for 2 mins on high. After that add in your eggs and vanilla extract. Then next your going to begin to add your dry mixture to the wet mixture. Gradually add your flour mixture. Stir in chocolate chips and chopped nuts.

Drop by round measuring tablespoonfuls onto your cookie sheet. With this in mind I always use parchment paper in my baking. Bake 375F for 9-11 minutes. Additionally this makes about 10 dozen large batch chocolate chip cookies – Give or take a few.

Fresh Cookies

Chocolaty, Chewy.

You have 7 kids!? “How do you feed them all!?”

I am so grateful you took the time to read about one of the recipes that our family utilizes. As soon as people are initially introduced to me and learn that I am large family mom of 7 children. Undoubtedly, one questions I’m usually asked is, “how do you feed them all? I struggle just feeding myself.”

I am so excited to be able to start sharing how we raise our family here. Hoping to be able to bring a ton of motherhood, homeschooling and lifestyle content. Initially I really should disclose our days are so busy and full. And I really strive to try to capture the art of slow living in our bustling household.  Minimizing and streamlining areas of our lives are always my goal. For this reason a lot of my recipes are always large batch! And hence why large chocolate chip cookies were born.

If your interested in a more complete post on how we “feed them all”, a glimpse at our weekly or monthly meal plans or anymore larger than life recipes ( I have a bunch!!!!) Let me know in the comments below!
